Mom’s Brownies

I'm visiting my mom, so we are baking. Today we are making brownies to go with dinner.



Ingredients:

  • 1 cup + 2 tablespoons sugar
  • 1/2 butter (1 stick), room temperature
  • 2 eggs, room temperature 
  • 1/8 teaspoon salt
  • 1/2 cup cocoa
  • 1/2 cup all purpose flour
  • 1 cup walnuts (or pecans)
  • 1/2 cup sweetened cocoa flakes (optional)

Instructions:

  1. Preheat oven to 350.
  2. Lightly grease a 9” square pan with cooking spray or butter.
  3. With short bursts, process sugar and butter in food processor until well blended, about 20 seconds.
  4. Add eggs, salt, and cocoa, then process 10 to 15 seconds until smooth.
  5. Add flour, process 10 to 15 seconds until mixed in.
  6. Add nuts (and coconut if adding), with short bursts, process until broken up.
  7. Spread batter in a 9” square pan.
  8. Bake for 30 to 35 minutes, until no longer moist.
    (My mom suggest 25 minutes in a convection oven.)
  9. Cool pan on a wire rack for a few minutes.
  10. Cut into squares, and allow to finish cooling.

My mom has been using this recipe for years.

The recipe is mostly from her "Special Cuisinart Food Processor Recipe" book (circa 1972.)
