Quick Biscuits for Two

I wanted to freshen up  leftover soup for dinner, so I made Quick Biscuits for Two. I added a bit of cheddar - this is optional.




Ingredients:

  • 110 grams all purpose flour (this is a scant cup)
  • 2 teaspoons baking powder
  • 1/2 teaspoon white sugar
  • 1/4 teaspoon white salt
  • 2 tablespoons butter, cut up a bit into smaller bits
  • 3.5 ounces milk (or 1/4 cup milk, + spoonful of Greek Yogurt, and more milk to make 3.5 ounces)
  • option - 1 ounce cheddar, shredded
   

Instructions:

  1. Preheat oven to 450. Place silpat sheet on cookie sheet.
  2. Whirr dry ingredients + butter chunks together in a food processor.
  3. Pulse in milk in short burts, until dough starts to form clumps the size of a hazel nut.
  4. Dump dough onto lightly floured surface.
  5. Form dough into a rectangle
    (Cover with 1/2 or so of cheese if using)
  6. Fold dough over and press out a couple of times
    (Cover with rest of cheese if using)
  7. Fold dough over and press out a couple of times
  8. Quarter with a sharp knife, place on cookie sheet.
  9. Bake for about 10 minutes - should puff up, and be golden brown on edges and bottom.

These are not round, but I liked them anyway.
