Mexican Casserole

Doug was interested in a Mexican casserole cooked in a Dutch oven for a Boy Scout Court of Honor. I cooked up this casserole:

Sesame Sourdough Almond Flour Crackers

These are lower carb crackers made with sourdough starter and almond flour. I made them sesame so they would work with peanut butter!

Cheesy Chicken Quinoa

So it's National Mac and Cheese Day, but we are trying to eat lower carb. We had Cheesy Chicken Quinoa with green chilis, roasted peppers and onions, and avocados.
