Chocolate Protein Cookies

I was looking for a lower carb cookie, and made these. They are tasty!

Ingredients:

  • 1 egg, lightly whipped
  • 1/2 cup peanut butter
  • 1/2 cup protein powder (64g) (I used 2 scoops of Chocolate Orgain Organic Vegan Protein Powder)
  • 2 tbsp brown sugar
  • 1/8 tsp salt
  • 1/2 cup chocolate chips
  • 1 cup old fashioned oats

Instructions:

  1. Preheat oven to 350 degrees,
  2. Mix egg and peanut butter together, then add sugar, salt, and protein powder.
  3. Stir until a dough forms.
  4. Add in chocolate chips and oats, stir until well combined.
  5. Use larger cookie scoop, portion out 14 to 15 cookie.
  6. Place on cookie sheet, pressing flat into cookie shapes.
  7. Bake at 350 for 10 to 12 minutes.

Carole's Notes:

We like these! The cookies were not too sweet, and have maybe 4 to 5 grams of protein per cookie.

The recipe is adapted from https://chocolatecoveredkatie.com/protein-cookies/ -- when I tried Chocoalte Covered Katie's recipe, the cookies never set. So I added an egg and some oats, and re-baked them.
