Pretzel Pigs-in-a-Blanket

I decided I wanted pigs-in-the-blanket for one of our Super Bowl snacks, so I made these.

 

Ingredients:

Dough:
  • 1 cups (120g) King Arthur Unbleached All-Purpose Flour
  • 16bounces (467 gr) sourdough starter (or 240 gr more flour. and 8 ounces water)
  • 2 tablespoons brown sugar
  • 1 tablespoon dry milk powder
  • 1 tablespoon unsalted butter, softened
  • 1 teaspoon (6g) salt
  • 2 teaspoons instant yeast
  • 24 to 32 mini hotdogs or sausages (I used little smokies)
Water Bath:
  • 1.5 to 2 quarts water
  • 1/4 cup (64g) baking soda
     
 

Instructions:

  1. Weigh your flour and sourdough. 
  2. Mix and knead the dough ingredients together in a stand mixer until the dough is cohesive and fairly smooth. It should be slightly sticky.
  3. Cover the dough and let it rest for 30 minutes.
  4. Preheat the oven to 400°F (use the convection setting if you have it) 
  5. Lightly grease (or line with parchment or silpat mats) two baking sheets.  Lightly grease the parchment with cooking spray.
  6. Prepare the water bath by combining the water, salt, and baking soda in a 10" to 12" shallow saucepan or deep skillet. The water should fill the skillet at least 1 1/4" deep; adjust the water accordingly (no need to adjust the other ingredients).
  7. Gently deflate the dough on a lightly greased work surface, then divide it into as many equal pieces as  you have min hot dogs.
  8. Shape each piece of dough around a mini hotdog to cover - pinching the ends and seam with your fingers to seal. 
  9. Let the  pretzels rest on the prepared pans while you bring the water bath to a boil.
  10. Drop the pretzel bites, six at a time, into the water bath. Cook for 30 seconds, then return them to the baking sheet (using a slotted spoon)
  11. Sprinkle with kosher salt.
  12. Bake the pretzel bites for 14 to 16 minutes for 32 pretzels, or 18 to 20 minutes for 24 pretzel until they're a deep golden brown.
  13. Remove the pretzel bites from the oven, and cool slightly before serving with your favorite mustard.
