Grilled Chicken with Caribbean Green Seasoning

My friend Shahid gave me some Spanish thyme plants, as well as some leaves and a verbal recipe for making a green sauce. Here is what I made up with it.



Ingredients:

Caribbean  Green Seasoning:
  • 1.5 cups (40g) chopped cilantro
  • 1 cup (25g) roughly chopped parsley
  • 1/2 cup chopped Vidalia onion
  • 6 to 8 leaves Spanish thyme
  • 3-4 tablespoons lemon jucie (or apple cider vinegar)
  • 1/2 teaspoon minced ginger (or 1/4 teaspoon powdered)
  • 1 teaspoon minced garlic (or 1/2 teaspoon powdered)
  • 1/2 teaspoon salt, or to taste
  • optional - chili to taste
  • water as needed, perhaps about 1/4  to 1/2 cup
Chicken:
  • 2 large boneless chicken breasts
 

Instructions:

  1. Whirr all the green seasoning ingredients except the water in a food processor.
  2. Add some water as needed to make mixture spreadable
  3. Brush tops of chicken with 2 tablespoons of green seasoning, let marinade for at least 30 minutes
  4. Grill chicken, serve with extra sauce on the side
