Snickerdoodle Bars

I wanted to make an easy snack that Doug would like - I decided to look for a Snickerdoodle Bar recipe.


Ingredients:

Dough:
  • 332 grams (2 2/3 cups) all purpose flour (I used 100 gr whole wheat, rest all purpose)
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1 teaspoon salt
  • 214 gr (2 cups packed) brown sugar
  • 2 sticks (1 cup) butter, room temperature
  • 2 eggs, at room temperature
  • 1 tablespoon vanilla extract

Topping:
  • 2 tablespoons white sugar
  • 2 teaspoons cinnamon
  • pinch of nutmeg
 

Instructions:

  1. Preheat oven to 350° F. Lightly grease and/or line a 9×13 inch pan with parchment paper. 
  2. Mix together the flour, baking powder, cinnamon, nutmeg and salt  in a medium bowl and set aside.
  3. In a large bowl, beat together butter and brown sugar for 3-5 minutes. 
  4. Beat in the eggs one at a time, then the vanilla, and beat until smooth.
  5. Stir in the flour mixture until it is a well blended thick dough.
  6. Spread dough in prepared pan using a greased spatula or your wet hands. 
  7. Mix the white sugar, cinnamon, and nutmeg in a little bowl. 
  8. Sprinkle cinnamon sugar mixture over the top of the batter.
  9. Bake 25-30 minutes or until the surface springs back when gently pressed. Cool before cutting.
