Pork Chops in Sauerkraut - Instant Pot

We were thinking about what to have for lunch and dinner, and picked up some pastrami and other fixing to make Reuben sandwiches. I got a large jar of sauerkraut, planning to make pork chops with sauerkraut for dinner.  I still have a lot of caraway seeds left, so I was happy to find thus recipe.



Ingredients:

  • 1 large Sweet Onion peeled & sliced into thin strips
  • 1 cup diced carrots (or baby carrots, cut into slices)
  • optional - 1 stalk celery, thinly sliced into "Cs"
  • 1 clove garlic minced (or 1/2 teaspoon garlic powder)
  • 4 slices bacon diced
  • 16 ounces sauerkraut, drained & rinsed
  • 2 medium or 3 small apples, peeled and cut into 1" chunks
  • 1 large potato, peeled and cut into 1" chunks
  • 4 pork chops, 3/4" to 1" thick
  • 1/4 teaspoon black pepper
  • 14.5 oz can chicken broth (or 12 ounces German beer)
  • 1/4 cup lentils
  • 1 tablespoon caraway seeds
 

Instructions:

  1. Sauté onion, (celery if using,) and carrots until onions are opaque 3 - 5 minutes.
  2. Add garlic and cook another minute. Add chicken broth and de-glaze the pot.
  3. Add potatoes and apples to pot, stir in,
  4. Sprinkle with caraway seeds, stir in.
  5. Lay pork chops on top of veggies.
  6. Leyer sauerkraut on top of the pork chops.
  7. Cook on High Pressure for 13 minutes. Naturally release pressure for 4 minutes, then Quick release.
