Soft and Creamy Sweet Potatoes

We were trying for a simpler meal this year. Instead of sweet potato casserole, I made sweet potatoes in the Instant Pot.


  

Ingredients:

  • 4 to 6 medium to small sweet potatoes
  • 1 cup water
  • sprinkling of cinnamon
 

Instructions:

  1. Scrub the potatoes with a brush until clean. 
  2. Pour water into Instant Pot, then place steamer basket or rack in the bottom of the pan. 
  3. Place sweet potatoes on top of the rack, stacking potatoes as needed.
  4. Secure the lid, set to pressure cook on high for 15 minutes.
  5. Allow pressure to “release naturally” for at least 10 minutes
    (they will stay warm longer if your other sides are cooking.)
  6. Slice open, sprinkle with a little cinnamon and serve.

We liked this! The sweet potatoes turned out very soft and creamy.
