Chocolate Cherry Sourdough Muffins

I tweaked my Chocolate Sourdough Muffin recipe a bit to make Chocolate Cherry Sourdough Muffins - some of which I shared with Emily.



Ingredients:

  • 12  ounces sourdough starter (or 6 ounces water + 6 ounces flour)
  • 1/4 cup canola oil
  •  2  eggs     
  • 1 teaspoon vanilla
  • 1.5  ounces All-Purpose Flour   
  • 1/3  cup cocoa powder
  • 1/2  cup sugar
  • 3/4 teaspoon baking powder
  • 1/2  tsp salt
  • 1/2 cup chocolate chips  + a handful more for decoration
  • 1/2 cup dried cherries

Instructions:

  1. Feed your sourdough before you go to bed or early in the so you have 12 ounces to use. Cover with kitchen towel.
  2. In the morning, preheat the oven to 350 degrees with a rack in the middle of the oven.
  3. Either grease the wells of a 12-well muffin pan, or use cupcake papers.
  4. Mix together sourdough starter, oil, eggs and vanilla.
  5. Weigh the flour in  small bowl, mix in the other dry ingredients except the cherries and chocolate chips. 
  6. Stir the flour/cocoa mix evenly into the sourdough/egg mix so there are no white spots.
  7. Gently fold in the chocolate chips and cherries.
  8. Using a 1/4 cup measure, place one level scoop of batter into the 12 wells of the pan.
  9. Sprinkle each muffin with some extra chocolate chips, and a couple of cherry pieces.
  10. Bake for 22 - 25 minutes
  11. Remove muffins from pan after a couple of minutes, and let them cool on a wire rack.

Carole's Notes:

We liked these! This recipe made 12 regular size muffins.

Note: The muffins are not as sweet as a cupcake, but quite sweet enough for breakfast or snacking.
