Stuffing Soup

Since Joanne likes soup, I was looking for a Christmas leftover soup. I found a recipe for Stuffing Soup!




Ingredients:

  • 1/2 Vidalia onion
  • leftover chicken or turkey bones
  • 4 cups chicken broth
  • 2 cups water
  • 2 stalks celery chopped (including leaves)
  • 1/2 cup carrots, chopped finely (I sliced up some baby carrots)
  • 3 cups leftover stuffing
  • 1.5 cups cooked turkey (or chicken or ham), cut into 1/4" cubes pieces
  • Optional - Up to 1 cup of leftover gravy
  • 3 cups thinly sliced kale or spinach leaves
  • salt and pepper to taste

Instructions:

  1. Preheat the oven to 400 degrees.
  2. Place the leftover bones in a shallow baking dish. Peel and chop onion.
  3. Roast the bones and onions for 20-25 minutes or until nicely browned, turning once.
  4. Remove the bones and onions from the pan and place in the Instant Pot with chicken broth. Pour a quarter cup of water into the roasting pan, then scrape out stuck on bits of meat. Add to the stock pot.
  5. Add chicken broth and water to the Instant Pot, pressure cook for 15 minutes.
  6. Let release naturally for 10 minutes after cooking is complete.
  7. Remove bones from the stock pot.
  8. Stir in stuffing, turkey/chicken, and leftover gravy, let heat up.
  9. Stir in the spinach/kale and let simmer for a few minutes.
  10. Add salt and pepper to taste as needed.

We liked this - it was tasty, and a fairly thick soup.
