Sous Vide Eye of Round

I decide to sous vide an eye of round - the Internet says if you cook it for 30 hrs, it will be soft and tasty.
I think I made this before, but I am documenting it today.



Ingredients:

  • ~ 2.5 pound eye of round roast (which fits in my Instant Pot)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika

Instructions:

  1. Fill Instant Pot (or sous vide vessel) maybe half full with warm water at ~134 degrees. Put on small rack to keep roast off of the bottom or the pot.
  2. Set temperature to 131 degrees, and time to 30 hours. Press start.

  3. Mix spices together
  4. Rub on eye of round (possibly rub on 1 tablespoon of olive oil first)
  5. Vacuum seal the roast
  6. Immerse it in the warm water in the Instant Pot (adjust water to cover top as needed)
  7. Cook for ~ 30 hours 
  8. Remove roast from water, and from bag. 
  9. Optional - Gently pat it dry, trying not to run off spices. Sear it with a Searz All or in a really hot skillet with 1 tablespoon of oil 15 seconds per side.
 

Carole's Notes:

We liked this! The meat was quite soft and tender. I served it with the juices from the bag, as well as asparagus and Air Fryer french fries.
