Pork Tenderloin Carnitas

Doug likes pork carnitas, so I decided to try a slow-cooker-in-the-Instant Pot recipe.


Ingredients:

  • 2.5 pounds pork tenderloin (for me, 1/2 of a pack from Costco)
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 teaspoon cumin
  • 1 teaspoon oregano
  • 1/2 teaspoon. chili powder
  • 1/2 teaspoon. onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 Tablespoon chili powder
  • 1 Tablespoon lime juice
  • 1 Vidalia onion, sliced in thin strips
  • 4 ounces canned green chilis 
  • 1/2 cup fresh squeezed orange juice
  • 2 Tablespoons fresh chopped cilantro

Instructions:

  1. Place pork tenderloins in Instant Pot and sprinkle with spices. Add chilis, lime juice, and orange juice.
  2. Drop sliced onions on top.
  3. Set for slow cooker mode, and cook on low heat for 6-8 hours or high for about 4 hours.
  4. Shred the meat, then stir around in sauce so more is soaked up.
  5. If you like the crunchy bits, broil or pan fry some of the shredded pork .
  6. Stir in fresh cilantro. Serve with avocados, cheese, and onions in soft taco shells.

We liked this. This may have been Doug's favorite Instant Pot recipe. (He likes his carnita meat soft - I prefer mine with a little more crunch.)
