Apple Pecan Feta Spinach Salad

I wanted a festive salad to go with shrimp cocktail for dinner. I had feta and spinach, so I made this
one.



Ingredients:

Salad:
  • ~ 5 oz baby spinach (or mix in half romaine)
  • 1 medium apple, peeled, cored, and diced
  • 1/2 cup pecans, toasted
  • 2 oz (1/2 cup) feta cheese, crumbled 
  • 1/4 cup dried craisins (soak in hot water to cover if very dry)
  • 4 strips bacon, cooked and crumbled
  • 1 stalk celery, diced
Apple Cider Vinaigrette:
  • 1/4 cup olive oil
  • 2 Tbsp apple cider vinegar
  • 1 Tbsp honey
  • 1 tsp stone ground mustard
  • 1/8 tsp salt
  • 1/8 tsp freshly ground black pepper
  • 1 tablespoon poppy seeds

Instructions:

  1. Soak craisins in hot water while dicing other ingredients.
  2. Mix up marinade.
  3. Remove stems from spinach, dice craisins if desired.
  4. Place all salad ingredients in a large bowl, dress with vinaigrette.

Carole's Notes:

We liked this! The vinegrette is light, the mix of sweet, crunchy, salty, savory was quite nice.
It made 2 very large or 3 medium servings.
