Indian Green Beans

I wanted a green bean recipe to go with Indian food. I found this recipe for Gujarati.



Ingredients:

  • 1 pound fresh green beans, trimmed and cut into 1 inch pieces
  • 2 tablespoons vegetable oil
  • 1 tablespoon horseradish
  • 4 cloves garlic, finely chopped
  • 1/2 teaspoon red chili flakes
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon white sugar
  • ground black pepper to taste

Instructions:

  1. Bring a large pot of water to a boil. 
  2. Place the green beans in the pot, and cook briefly until bright green, removing after 3 to 4 minutes. 
  3. Drain the beans, and rinse with cold water. Dump the rinsed beans on a kitchen towel and pat dry.
  4. Heat the oil in a large skillet over medium heat. 
  5. Stir in the horseradish and garlic, and cook until golden brown. (about 30 seconds)
  6. Mix in the chili flakes. 
  7. Add the green beans to the skillet, and season with the salt and sugar. 
  8. Cook and stir 8 - 12 minutes, or until tender. Season with pepper to serve.
