Cottage Cheese Pancakes

I tried a new recipe today - cottage cheese pancakes! They are low carb and high protein.



Ingredients:

  • 3 eggs, lightly beaten
  • 2 tablespoons vegetable oil
  • 1 cup cottage cheese
  • 1/3 cup all-purpose flour
  • optional - zest from 1/2 a lemon

Instructions:

  1. Whisk eggs in a medium bowl.
  2. Whisk in oil. 
  3. Mix in cottage cheese.
    (Use an immersion blender or mix in a food processor if you want a smoother batter.)
  4. Mix in flour (and lemon zest if using.)
  5. Heat a large skillet over medium heat, and coat with cooking spray/oil/butter.
  6. Scoop 1/3 cup of batter per pancake.
  7. Cook for 3 minutes or so until some bubbles appear on top, flip pancakes, and cook for another minute or so.

Carole's Notes:

We liked these, especially with diced strawberries on top and a bit of maple syrup. They are light enough, a bit chewy, and not too thick. (I usually like thin pancakes, but these were fine.)  Some variations mix diced fruit into the pancakes.

The recipe makes about 8 pancakes - probably enough for 2 people.
