Oven Roasted Asparagus in Balsamic Sauce

I needed to post a vegetable recipe to show that sometimes I bake them. I made these to go with Doug's birthday dinner - slow cooked ribs and Oat Wheat bread.



Ingredients:

  • asparagus (maybe 1/2 a pound)
  • olive oil
  • 2 tablespoons butter
  • 1 teaspoon soy sauce
  • 2 to 3 teaspoons of balsamic vinegar.

Instructions:

  1. Preheat oven to 400
  2. Toss asparagus in olive oil, lightly sprinkle with Kosher salt
  3. Bake for 12 minutes or until tender
  4. While asparagus cooks, melt butter. Stir in soy sauce and vinegar.
  5. Pour sauce over the spears into the same hot pan and serve

Carole's Notes:

We liked this so much that when we ate leftover ribs we made the asparagus again.
