Big Daddy's Biscuits

Home made biscuits, with a cheddar option. (The picture shows the cheddar option. I think I use the scoop a 1/4 cup of dough and drop method to make these.)

Ingredients:

    2 cups all-purpose flour
    1 tablespoon baking powder
    1 teaspoon salt
    1 tablespoon white sugar
    1/3 cup butter
    3/4 to 1 cup milk
     (Optional: 1 cup shredded cheddar)

Instructions:

  1. Preheat oven to 425 degrees F.
  2. Line a large cookie sheet with parchment paper.
  3. In a food processor, whir together the flour, baking powder, salt, and sugar. Cut in the butter until the mixture resembles coarse meal.
  4. Transfer to a bowl. (Optional: Stir in cheese if adding.)
  5. Gradually stir in milk until dough pulls away from the side of the bowl.
(You may not use a full cup of the milk.)
  6. Dump dough onto a floured surface, and fold over up to 10 times.
    (Don't over mix the dough)
  7. Pat dough out to 1 inch thick.
  8. Cut biscuits with a large cutter dipped in flour.
  9. Pat scraps back together, and repeat cutting until all dough is used.
  10. Place biscuits onto parchment paper on the cookie sheet.
  11. Bake for 13 to 15 minutes in the preheated oven, or until golden brown and the edges start to brown.

Carole's Notes:

I use this as my go-to biscuit recipe, especially when a recipe refers to canned biscuits.
They may rise more if you make up the dough several hours ahead and refrigerate until time to bake them. Recipe is lightly adapted from http://allrecipes.com/recipe/7040/jps-big-daddy-biscuits/
