Thai-ish Spinach Salad

I wanted a green salad to go with my Bean with Bacon Soup for dinner, so I made a Thai-ish Spinach Salad



Ingredients:

  • 1/4 cup cilantro, coarsely chopped
  • 1 tablespoon chopped Vidalia onion
  • 1 garlic clove, finely grated (or 1/2 teaspoon granulated garlic)
  • 2 teaspoons Sriracha sauce
  • 1 tablespoon fresh lime juice
  • 1 tablespoon  brown sugar
  • 1 teaspoon fish sauce (or Worcestershire sauce)
  • 1 avocado, peeled and sliced
  • 1 medium tomato, cut into 1" pieces
  • 1 cup spinach
  • 1/4 teaspoon Kosher salt
  • 2 tablespoons smoky almonds, diced

Instructions:

  1. Place 1/2 of cilantro in medium bowl.
  2. Add dressing (from onion to sauce) to bowl, mix well.
  3. Add avocado, tomatoes, and spinach, season with kosher salt, and toss.
  4. Sprinkle with diced almonds and reserved cilantro.
