Ingredients:
- 1/4 cup cilantro, coarsely chopped
- 1 tablespoon chopped Vidalia onion
- 1 garlic clove, finely grated (or 1/2 teaspoon granulated garlic)
- 2 teaspoons Sriracha sauce
- 1 tablespoon fresh lime juice
- 1 tablespoon brown sugar
- 1 teaspoon fish sauce (or Worcestershire sauce)
- 1 avocado, peeled and sliced
- 1 medium tomato, cut into 1" pieces
- 1 cup spinach
- 1/4 teaspoon Kosher salt
- 2 tablespoons smoky almonds, diced
Instructions:
- Place 1/2 of cilantro in medium bowl.
- Add dressing (from onion to sauce) to bowl, mix well.
- Add avocado, tomatoes, and spinach, season with kosher salt, and toss.
- Sprinkle with diced almonds and reserved cilantro.
