Ingredients:
- 1/2 cup (60g) white whole wheat flour
- 1/4 teaspoon baking powder
- 1/4 teaspoons salt
- 1 teaspoon instant yeast
- 2 tablespoons olive oil
- 8 ounces sourdough starter
(or 4 ounces water + 4 ounces all-purpose flour)
Instructions:
- Pulse together flour, baking powder, salt and yeast in a food processor.
- Pulse in the oil.
- Add in the sourdough starter, and whirr together until the sourdough and flour are well mixed together. (Whirr for 2 or 3 minutes.)
- Move the dough to a small oiled bowl, and allow it to rest for 10 minutes to an 1 hour.
- Turn the dough onto a lightly floured work surface and divide it into 4 pieces.
(about 80 grams per ball) - Gently fold each piece into a small disk - let rest for 10 minutes or so with plastic cover.
- Preheat a heavy skillet or griddle at medium high heat on the stove.
- Roll or press the pieces into 6" circles. (I used my tortilla press.)
- Heat the tortillas for 2 minutes on the dry skillet - they should develop some brown spots, and may bubble up bit.
- Flip the tortillas, and cook them for 1 more minute so both sides brown a bit.
- Remove the tortillas from the skillet, then stack then and wrap them in a clean dishtowel
(this helps them soften). - Repeat with the remaining dough.

We liked these! They were kind of a puffy tortilla - I probably did not need to add the yeast.
