Ingredients:
- 1 cup (227 g) sourdough starter, unfed
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
- Optional - 1 to 2 tablespoons water (if your starter is mature and thick)
Instructions:
- Start a griddle or 12" pan on the stove at medium-low heat.
(maybe a 4 on the gas stove) - Stir in the baking soda.
(I probably will mix the baking soda with 1 to 2 tablespoons of water next time.) - The batter should bubble and rise up a bit.
- Lightly grease the heated pan with cooking oil and then a pat of butter.
- Lightly grease four English muffin rings (or similar - 1" high x 4" wide)
- Pour about 1/4 cup batter in each ring.
(My starter was thick enough, I had to spread it into the rings. I will add some water next time..) - Cook for about 5 minutes - the tops should be full of holes and starting to set.
- Flip crumpets over, cook another minute or two.
