Sourdough Crumpets

I saw a simple crumpet recipe, and decided to try them.



Ingredients:

  • 1 cup (227 g) sourdough starter, unfed
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • Optional - 1 to 2 tablespoons water (if your starter is mature and thick)

Instructions:

  1. Start a griddle or 12" pan on the stove at medium-low heat.
    (maybe a 4 on the gas stove)
  2.  Stir in the baking soda.
    (I probably will mix the baking soda with 1 to 2 tablespoons of water next time.)
  3. The batter should bubble and rise up a bit. 
  4. Lightly grease the heated pan with cooking oil and then a pat of butter.
  5. Lightly grease four English muffin rings (or similar - 1" high x 4" wide)
  6. Pour about 1/4 cup batter in each ring.
    (My starter was thick enough, I had to spread it into the rings. I will add some water next time..)
  7. Cook for about 5 minutes - the tops should be full of holes and starting to set.
  8. Flip crumpets over, cook another minute or two.

We liked these - Doug and I both had one each for breakfast with eggs and bacon. (We are trying to be lower carb...)
