Tex-Mex Mac-n-Cheese - Instant Pot

Doug and I both exercised this morning, then went for a tandem bicycle ride this afternoon. We needed a quick meal, and Doug suggested pasta. I had been wanting to try a version of a Tex-Mex Mac-n-Cheese I saw.

Migas (Scrambled Egg Nachos)

I saw a recipe for Migas recently - they look like scrambled egg nachos! I sent a link to Alex because I thought he would like them. 

Turns out we needed something for lunch today, so I made migas.

  

Mexican Soup

I wanted to find a use for some dried chilis I bought awhile ago, so I made some Mexican soup.

Pulled Chicken with Green Chili Mac-n-Cheese

I had about 16 ounces of leftover barbecue sauce from 4Rivers Smokehouse, so I decided to make pulled barbecue chicken. I needed a side dish, so I also made Green Chili Mac and Cheese in my pressure cooker.
