Ingredients:
- 4 eggs
- 1 ripe avocado
- 1 tablespoon diced pickles
- 1 tablespoon mayonnaise
- 1 tablespoon yellow mustard
Instructions:
- Hard boil 4 eggs.
- Instant Pot hard boiled eggs - put trivet in pot, add 1 cup of water. Place eggs on trivet.
- Set to Pressure cook for 5 minutes.
- Let natural release for 5 minutes.
- Quick release, then place eggs in a bowl of water and ice for 5 minutes to cool down.
- After eggs are cooled down, remove from shell and cut into large dices.
- Mash up avocado in a small bowl. Stir in mayonnaise, mustard, and pickles.
- Fold in hard boiled egg pieces.
