Avocago Egg Salad

I had a lot of eggs, and a lot of avocados, so I made avocado egg salad.



Ingredients:

  • 4 eggs
  • 1 ripe avocado
  • 1 tablespoon diced pickles
  • 1 tablespoon mayonnaise
  • 1 tablespoon yellow mustard

Instructions:

  1. Hard boil 4 eggs.
    1. Instant Pot hard boiled eggs - put trivet in pot, add 1 cup of water. Place eggs on trivet.
    2. Set to Pressure cook for 5 minutes.
    3. Let natural release for 5 minutes.
    4. Quick release, then place eggs in a bowl of water and ice for 5 minutes to cool down.



  1. After eggs are cooled down, remove from shell and cut into large dices.
  2. Mash up avocado in a small bowl. Stir in mayonnaise, mustard, and pickles.
  3. Fold in hard boiled egg pieces.

I liked this - I found the Instant Pot hard boiled eggs were very easy to remove from the shell.
