Sliced Tomatos with a Fresh Herb Dressing

We have a lot of ripe tomatoes, so I looked for a herb and tomato recipe and decided to try this.

  

Carne Asada Nachos

Glenn mentioned his current favorite food was carne asada fries. I did some Googling, and decided to practice by making carne asada nachos since I had some leftover Mexican cheese sauce and leftover steak and chicken.

Roasted Aloo Gobi

We had some cauliflower to use up, and Libby told me once that I need to learn to make delicious vegetables, so I made an Indian version of roasted cauliflower and sweet potatoes.

I invited Glenn over for dinner, and asked him to suggest a dish for dinner. He asked for Chicken Tikka Masala.

California Wheels

I wanted to make an appetizer for a 'California'  themed potluckm so I came up with California Wheels. Chicken, cream cheese, cilantro, and avocados are the main ingredients.

Beef Taco Egg Rolls

I wanted something Mexican-ish for dinner, and also wanted to use up some leftover sausage. I was also looking for recipes for my new Air Fryer, but I needed to feed four people. I adapted a Air Fryer recipe a bit and made Beef Taco Egg Rolls.

Cowboy Caviar

Cowboy Caviar - perhaps also known as Southwest bean salad. My friend's bother Mark made a big batch for a party a couple of weeks ago, and shared his recipe with me.  I made up a big batch for tomorrow's open house for Ben and Brandi.

Couscous Tabouli Salad

I felt like Tabouli  - so I made a large bowl today.
(It was dinner tonight, and will be served with Tandoori Chicken as leftovers on Sunday.)
