Taco Casserole - Lower Carb

I was looking for a low carb taco casserole recipe, and used this recipe.

 

Chili Con Carne with Beans

Carissa suggested maybe chili for dinner. I also had about 3 cups of leftover baked beans, so I decided to used them in a chili.

Carne Asada Nachos

Glenn mentioned his current favorite food was carne asada fries. I did some Googling, and decided to practice by making carne asada nachos since I had some leftover Mexican cheese sauce and leftover steak and chicken.

Mexican Pizza

I thought we should have a Mexican pizza for dinner, so I made one using a crust I had used before.


 

Green Chili Chicken Casserole - Low Carb

We had guacamole and chips, so I was looking for a cheesy chicken casserole to go with it. We had this for dinner tonight.

Doug and I both exercised this morning, then went for a tandem bicycle ride this afternoon. We needed a quick meal, and Doug suggested pasta. I had been wanting to try a version of a Tex-Mex Mac-n-Cheese I saw.

I've been thinking about making pork carnitas for awhile, since the local Mexican restaurant no longer offers them. I mashed a couple of recipes together to make this one.

 

Cheesy Chicken Quinoa

So it's National Mac and Cheese Day, but we are trying to eat lower carb. We had Cheesy Chicken Quinoa with green chilis, roasted peppers and onions, and avocados.

Taco Rolls

I needed to use my sourdough starter for something, and we had some leftover taco meat. I decided to make Taco Rolls.

I wanted a quick lunch today, and decided to make cheese and green chili quesadillas with homemade corn tortillas.

Green Chili Cheddar Sourdough Mini Bundtlettes

Test driving my new mini bundtlette pan - this time going for a savory snack, While reaching for feta, I noticed some leftover green chilis. Since I was still making up the recipe, it evolved into Green Chili Cheddar Sourdough Mini Bundtlettes.

Green Chili Chicken Enchilada Casserole

I was looking for a casserole that would keep nicely in the oven while heading to the airport to pick up Gramma. Alex likes Mexican food, Gramma does not really like red sauce. I decided upon a Green Chili Chicken Enchilada Casserole.

Pulled Chicken with Green Chili Mac-n-Cheese

I had about 16 ounces of leftover barbecue sauce from 4Rivers Smokehouse, so I decided to make pulled barbecue chicken. I needed a side dish, so I also made Green Chili Mac and Cheese in my pressure cooker.

Green Chili Queso

As part of the taco bar theme for Ben and Brandi's open house, I made Green Chili Queso.

Cheese, Bean, and Chili Pupusas

I wanted to make some gluten free rolls or bread, and came upon a recipe for cheese pupusas.
Pupusas are similar to corn tortillas, but are thicker and are usually stuffed with cheese, beans, meat, or some combination.
I made some for Doug to take camping. (My first batch had the cheese mixed directly into the dough.)
I decided to make some stuffed ones for my dinner tonight.

Note: My recipe below will make 4 cheese, bean, and chili pupusas -- I make separate top and bottom pieces, and sandwich the fillings between them.
   

Baked Chili Rellenos

I bought some Anaheim peppers awhile ago, and some Yellow Wax peppers today (I thought they were banana peppers, but they are longer and hotter...) So tonight I made baked Chili Rellenos - Alex called it 'a recipe never before made by Mom -- or the world.'

My twist - instead of frying these in an egg based batter, I baked them in egg roll wrappers.

I think they look Christmas-sy!
