Ingredients:
- 2 jalapeno peppers
- 3 - 4 tablespoons cottage cheese (or cream cheese)
- 1 tablespoon feta
- dash of garlic powder, paprika, & black pepper (or 1/4 teaspoon fajita seasoning)
- 2 strips bacon (I used pre-cooked)
- 1 ounce cheddar cheese, shredded
Instructions:
- Preheat the oven to 400 degrees.
- Slice the peppers open, trying to reserve some of the stems for both side.
- Scoop out most of the inner membrane and seeds. (Leave some in, for a hotter popper.)
- Whirr the cotttage cheese in a food processor, add feta and spices.
- Fill the poppers with the cottage cheese mix.
- Cut the bacon in half, and cover the poppers with a piece.
- Nestle each popper in an inverted wire rack on cookie sheet. (This is to stabilize them, so they don't spill while baking.)
- Bake in pre-heated oven for ~15 minutes - the pepper should soften up.
- Sprinkle with cheddar cheese, and bake for a couple of minutes more. (You might broil them for the last 2 minutes.)
Carole's Notes:
We liked these! They were not too hot - I may have scraped them well, or picked a not-too-hot pepper. The recipe is adapted from https://www.dinneratthezoo.com/bacon-wrapped-jalapeno-poppers/
