I saw a recipe for Migas recently - they look like scrambled egg nachos! I sent a link to Alex because I thought he would like them.
Turns out we needed something for lunch today, so I made migas.
Ingredients:
- 4 large eggs
- 1/2 teaspoon each: ground cumin, salt, black pepper, garlic powder
- 1 tablespoon olive oil
- 1/4 cup onion, peeled and diced
- 2 tablespoons green chilis
- 2 handfuls corn tortilla chips, roughly crumbled
- 1 plum tomato, diced
- 1/3 cup salsa (I used some Salsa Verde this time)
- 1/3 cup shredded cheese
- 1 tablespoon chopped fresh cilantro
Instructions:
- In a medium bowl, whisk together eggs, cumin, salt, pepper, and garlic. Set aside.
- Heat oil over medium-high heat in a large sauté pan. Add onion and sauté for 5 minutes, stirring, until the onion is soft and translucent.
- Add green chilis, and sauté for 1-2 additional minutes, stirring occasionally.
- Add the egg mixture, and reduce heat to medium.
- Cook for 3-4 minutes, stirring frequently, until the eggs are scrambled.
- Stir in the tortilla chips, diced tomatoes, salsa and cheese.
- Continue heating for 1-2 minutes, stirring occasionally.
- Sprinkle with chopped cilantro, and serve.
