I saw a recipe for Schoggi Brotli when I was looking up Swiss recipes last week. I decided to make them today with my mom - they are round and chocolate and sourdough!
Ingredients:
- 130 ml milk (about 4 ounces)
- 340 grams (12 ounces) sourdough starter
- 2 teaspoons dry yeast
- 3 tablespoons sugar
- 60 grams butter, softened and cut into pats
- 1 teaspoon vanilla
- 1 teaspoon salt
- 2 tablespoons powdered milk
- 330 grams flour
- 150 grams dark chocolate, chopped (I used chocolate chips which I partially chopped)
For egg wash: - 1 egg
- 1 tablespoon milk
- pinch salt
- 1/4 teaspoon sugar
Instructions:
- Whisk together the milk, yeast, and sugar, and sourdough in a stand mixer - let sit will you measure other ingredients and chop the chocolate.
- Mix in salt, powdered milk, and flour together. Add flour mix into milk mix in stand mixer bowl.
- Knead until a dough starts to form, then add the butter and chocolate
- Knead for about 6 minutes in a stand mixer with a dough hook.
- Cover and let rise for about an hour or until the dough has doubled in size.
- Spray wells of a 12 count and a 6 count cupcake pan with cookie spray.
- Divide the dough into eighteen small balls (about 62 grams each) and place in the prepared cupcake pans.
- Let rest for 30 minutes or so to rise some more, after 15 minutes or so preheat oven to 375° F.
- Whisk together the egg, water, and salt, then brush all of the balls.
- Bake for about 18-20 minutes or until they are golden brown.
