Ingredients:
- 2 to 3 pounds fresh mussels
- 1-2 cloves garlic thinly sliced
- 2 tbsp fresh basil chopped (or 2 tsp dry)
- 1 pinch crushed red pepper flakes
- 2 tbsp olive oil
- 2 tbsps biutter
- 2 ounce white wine optional
Instructions:
- Rinse mussels thoroughly.
(Place mussels in a colander inside of a bigger bowl, rinse with cold water, remove any mussels that do not close if you tap them. Drain, Repeat 3 times.) - In a 12" saute pan, heat olive oil.hAdd garlic slices, and heat for about 30 seconds.
- Stir in the basil and red pepper flakes, then stir in the mussels.
- Cover the pan and allow the mussels to steam open.
(Shake the pan a couple of times while steaming.) - When the mussels have opened, allow them to steam for 2-3 more minutes and serve immediately.
(Throw away any that do not open.)
