Ingredients:
- 1/2 cup (102 gr) whole wheat flour
- 1 teaspoon baking powder
- 1 teaspoon Kosher slat
- 1//2 teaspoon grind pepper
- 4.5 tablespoons olive oil (1 for cooking onions, 3.5 for batter)
- 1 small onion, finely chopped (I use about 1/4 of a Vidalia)
- 2 loosely packed cups (170 gr) shredded or chopped kale (I used part spinach)
- 2 eggs
- 1/3 cup (80 ml) milk
- 3 medium apples (about 300-350 grams after coring and peeling) (I used about 420 gr)
- 1 cup (85 grams) shredded cheese (I used 100 gr half Mexican mix, and half feta, and sprinkled some extra cheese on top after baking)
Instructions:
- Pre-heat the oven to 350° F.
- Butter or using baking spray a 8-inch spring form pan. Place on a cookie sheet that is covered in parchment paper or a Silpat mat.
- Sauté on medium heat onion in 1 tablespoon of olive oil for a couple of minutes, then add shredded kale and stir and cook for another 2 minutes.
- Add 1 tablespoon of water to kale, cook for another minute or so until dry. Rake off heat and let cool.
- Chop peeled apples into small chunks (maybe 1/3" to 1/2" cubes)
- In a small bowl, whisk together the flour, baking powder, salt, and pepper.
- In a medium bowl, whisk eggs until foamy
- Whisk milk into eggs.
- Whisk in half of the flour.
- Whisk in remaining 3.5 tablespoons of oil, then whisk in remaining flour.
- With a spatula, fold in the apples until each chunk is coated in batter.
- Fold in the kale, stirring to spread around evenly.
- Fold in cheese.
- Scrape the batter into the pan squishing into sides. Even out the top.
- Bake in the preheated oven for 45 to 50 minutes, or until top is golden brown. (It will be browner around the edges.)
- Check for doneness - a skewer stuck in the center will come out clean.
- Transfer pan to a rack to cool for 10 minutes.
- Carefully run a knife around the sides to separate cake from pan.
- Allow cake to cool some more, and serve slightly warm.

We liked this! Mom thought the extra apples should be used going forward. I think it could have used some sausage or ham chunks - but then it would not be vegetarian any more.The recipe is lightly adapted from Baking with Dorie's Custardy Apple and Kale Cake.
