Almond Flour Drop Biscuits

Still working though an overbuy of cottgae cheese. Tonight I made Almond Flour Drop Biscuuts - they do have cottage cheese.

 

 

Ingredients:

  • 1 large egg
  • ¼ cup cottage chesse
  • ¼ teaspoon Kosher salt
  • 2 teaspoons baking powder 
  • 1 cup (4oz) almond flour 
  • 2 tablespoons shredded cheese (optional but recomemnded)
 

Instructions:

  1. Preheat oven to 350 F.  
  2. Line a cooking sheet with a Silpat mat or parchment paper. 
  3. Whisk egg, cottage cheese, salt, and baking powder together in a small food processor.
  4. Transfer the egg mix to a medium bowl.  
  5. Fold in the almond flour and shredded cheese until well combined,
  6. Drop six rounded large cookie scoops ( 2 tablespoons before rounding) onto the baking sheet.
    (Do not flatten.)
  7. Bake until golden, about 15 minutes to 18 minutes.
 

Carole's Notes:

Mom and I liked these - they are light and tender.  They went well with our mussels. 

This recipe makes six dropped biscuits - this is a pretty resaonable amount.
