Still working though an overbuy of cottgae cheese. Tonight I made Almond Flour Drop Biscuuts - they do have cottage cheese.
Ingredients:
- 1 large egg
- ¼ cup cottage chesse
- ¼ teaspoon Kosher salt
- 2 teaspoons baking powder
- 1 cup (4oz) almond flour
- 2 tablespoons shredded cheese (optional but recomemnded)
Instructions:
- Preheat oven to 350 F.
- Line a cooking sheet with a Silpat mat or parchment paper.
- Whisk egg, cottage cheese, salt, and baking powder together in a small food processor.
- Transfer the egg mix to a medium bowl.
- Fold in the almond flour and shredded cheese until well combined,
- Drop six rounded large cookie scoops ( 2 tablespoons before rounding) onto the baking sheet.
(Do not flatten.) - Bake until golden, about 15 minutes to 18 minutes.

Mom and I liked these - they are light and tender. They went well with our mussels.
This recipe makes six dropped biscuits - this is a pretty resaonable amount.
