Ingredients:
- 8 ounces (250 grams) all purpose flour
- 1 teaspoon salt
- 2.5 teaspoons baking powder
- 5 tablespoons cold unsalted butter, sliced into pats
- 1.5 cups small curd cottage cheese
- 1/2 cup shredded cheese (optional but recommnded)
Instructions:
- Preheat oven to 450 F.
- Whisk flour, salt and baking powder into a large bowl.
- Cut butter in with a pastry blender until it is the size of small peas.
- Stir in cottage cheese all at once.
- Drop a rounded tablespoon full (my large cookie scoop) onto an ungreased baking sheet.
- Bake until golden, about 15 minutes.
Carole's Notes:
Mom and liked these - the are light and moist. They went well with our mussels.
This recipe makes a lot of dropped biscuits - I baked 12, and probably have enough dough left for 8 more.
