We bought frozen salmon fillets recently, so I have been looking for recipes. I thought we might like this sheet pan recipe with some fajita spices.
Ingredients:
Salmon and Veggies:
- 2 Five oz salmon fillets
- ~1 Tbsps Fajita seasoning (see below)
- 1 potato, sliced into thin fingers (if not using tortillas)
- 1 bell peppers, sliced
- 1 large onion, sliced
- 2 Tbsps fresh chopped cilantro or parsley
Marinade:
- 2 Tbsps olive oil
- 1 Tbsps fresh lime juice
- 1 Tbsps fresh orange juice
- 1 Tbsps low sodium soy sauce
- 1 fresh garlic cloves, minced (or 1/4 teaspoon granulated)
Seasoning:
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/2 teaspoon paprika
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon ground cumin
Instructions:
- Mix the seasoning together.
- In a shallow large bowl or dish, whisk together all of the marinade ingredients with 1/2 of spices.
- Add salmon and marinate at least 30 minutes at room temperature.
- After 15 minutes, preheat oven to 400 degrees F.
- While salmon is marinating, slice the potato, microwave for 2-3 minutes to soften in medium sized bowl.
- Slice peppers and onions.
- Line baking sheet with Silpat mat (or parchment paper that you spray lightly with cooking spray)
- Add onions and bell peppers to bowl with potatoes.
- Sprinkle with remaining fajita seasoning and 1 tablespoon of marinade.
- Toss until evenly coated, then spread evenly on baking sheet. Bake at 400 degrees for 8 minutes.
- Remove pan, stir veggies, then add salmon to end.
- Bake at 400 degrees for another 12-16 minutes or until salmon is cooked through and flakes easily with a fork.
- Sprinkle with fresh chopped cilantro

We liked this! You could make it more fajita-like, with salsa, tortillas, and cheese.
