I was looking for a bell pepper side dish, and mixed two recipes to make this Bell Pepper and Kale Puttanesca Stir Fry,
Ingredients:
- 2 tablespoons extra-virgin olive oil
- 1/2 medium onion, sliced into 1/4-inch strips
- 1 bell pepper, seeded and sliced into 1/4-inch strips
- 2 or 3 plum tomatoes, quartered then squeezed gently to release some juices
- 2 cloves garlic, minced or crushed (or 1/2 teaspoon granulated)
- 1/2 teaspoon paprika
- 1/4 teaspoon red-pepper flakes pepper
- 1/2 cup green olives, chopped
- 2 tablespoons capers, rinsed and drained
- 2 teaspoons balsamic vinegar
- 1/2 bunch kale, de-stemmed and sliced into 1/4-inch strips
- Fresh basil leaves and crusty bread, for serving
- Salt and black pepper to taste
Instructions:
- Heat the oil in large skillet over medium-high heat.
- Add the onions, and cook for about 2 minutes.
- Add the bell peppers and tomatoes, cooking and stirring for 3 to 5 minutes, or until the peppers soften.
- Stir in the garlic, paprika, red pepper flakes, olives, capers, and balsamic vinegar. Add in the kale, cook while stirring for 2 to 3 minutes or until the kale wilts.
- As needed, season with salt and pepper as needed.
