These Balsamic Tomatoes made a nice side dish with salmon and broccoli.
Ingredients:
- 1 tbsp extra virgin olive oil
- 2 tablepoons Vidalia red onion,diced
- 2 tablespoons balsamic vinegar
- 1 tablespoons brown sugar
- 2 medium size tomatoes (or 3 plum tomatoes)
- 5 basil leaves, in slivers
- salt & black pepper to taste
Instructions:
- Preheat a skillet over medium heat.
- Add olive oil, and saute the onion with the brown sugar and a pinch of salt until the onions start to soften.
- Add the balsamic vinegar and simmer until reduced by half.
- Remove pan from heat. Let cool for a few minutes.
- Slice the tomatoes into bite size wedges, and add to pan.
- Toss to coat tomatoes. Add salt and black pepper to taste.
- Sprinkle with the fresh basil leaves and serve.
