We were thinking about making a gingerbread house. We had an old kit, but it was too old to use. I made up some dough to make a house, but we got busy. We made gingerbread rounds instead.
Doug bought a bunch of kale, and wanted me to find a way to use it. We also had several frozen sausages, so I decided we would have Sausage, Kale, and Bean Soup. My mom's visiting, so I put her to work dicing the veggies!
I was looking for a side dish to go with leftover ribs, and I had a couple of elderly tomatoes. I made a simple tomato soup that focused on the tomato flavor.
December is snack month for Property committee. Doug suggested I use some of the dates we had on hand. I adapted my focaccia recipe a bit, and made up a Feta Date Focaccia with Apple Date Jam.
I bought bell peppers today at Costco, but found when I got home that I already had five. Since we are trying to eat more low carb, I made up a low carb stuffed pepper recipe.

Doug signed us up for a concert tonight at Timucua. This might be a "bring drinks and snacks" to share night - we are not sure. Just in case, I made some Lebanese inspired snacks to go with Peter, the Lebanese-American musician who will be playing an oud. This is my version of Lebanese Cheese Flatbread (mana’eesh b' jibneh).

So it's National Mac and Cheese Day, but we are trying to eat lower carb. We had Cheesy Chicken Quinoa with green chilis, roasted peppers and onions, and avocados.
We are eating lower carb, which we translate to mean more veggies. Doug suggested trying some different spices, so I found a Chicken Bacon Ranch casserole to try.

I wanted to make a cookie using Hershey Kisses without peanuts. I decided on a chocolate base, because Emily LOVES chocolate. I'm calling them Kissed Chocolate Cookies, or Emily's Eyes.
They are for people who like chocolate with their chocolate.
I saw a recipe for feta and herb filled pogaca rolls that looked pretty. Since I had feta and rosemary, I had to try it today. I also made Brie pogaca rolls (show below.)
Pogaca rolls are often served for breakfast in Turkey.
The Youth wanted to bake as part of the Lock In activities, so I found a new-to-me recipe for a blueberry French toast casserole that we could prepare the night before. It turned out yummy!
