Mom and I made broccoli cheddar soup in the blender.
Ingredients:
- 240 ml (1 cup) milk
- 4 ounces cheddar cheese, shredded
- 2 cups broccoli florets, steamed
- 1/3 cup onion, peeled & diced (70g)
- (option - 6 or so baby carrots, diced & steamed)
- (option - 1/4 bell pepper, diced & steamed)
- ½ bouillon cube
- 1/4 teaspoon paprika
- 1/8 teaspoon black pepper
- A pinch of cayenne pepper
Instructions:
- Reserve 1/2 cup of broccoli and about 1 tablespoon shredded cheese
- Place remaining ingredients into the Vitamix container in the order listed so there is liquid at the bottom.
- Turn machine on the lowest setting, and slowly increase speed to Variable 10, then switch to High.
- Blend for 5-6 minutes or until heavy steam escapes from the vented lid.
- Pour into two bowls, Sprinkle with reserved broccoli and cheese on top.
