Ingredients:
- 2 hard-boiled eggs, peeled and sliced
- 1 avocado, peeled and chopped
- 2 to 3 cups of baby spinach leaves, cut into fork sized pieces
- ~6 mushrooms, cleaned and sliced
- 1/3 cup sliced sweet onions
- 1 tablespoon or so olive oil
- 1/4 cup almond, chopped then toasted lightly
(I toast for 10 minutes or so at 250 in the toaster oven) - 4 strips bacon, cooked until crisp (I heat up some pre-cooked bacon)
- 1 tablespoon apple cider vinegar
- 1 tablespoon spicy mustard
- 1 tablespoon honey
Instructions:
- Place spinach, eggs, and avocado in a medium mixing bowl.
- Saute onions and mushrooms in olive oil until onions are soft and translucent.
- Mix vinegar, mustard, and honey together to form a vinaigrette. Stir into onions, sprinkle in cooked bacon.
- Before serving, stir warm dressing into spinach salad, and stir to cover.
- Sprinkle the toasted almonds on top.
