Simple Sweet Potato Casserole

Since we are spending this week at a rental cabin in WA, I have been making simpler versions of our Thanksgiving foods.

 

Ingredients:

  • 40 oz can of yams, drained
  • 8 ounces pineapple bits
  • 1 teaspoon cinnamon
  • 1/2 teaspoon clove
  • 1/8 teaspoon nutmeg
  • 1/4 cup orange juice
  • 1/4 pineapple juice
  • 4 tablespoons brown sugar

  • 3/4 cup walnuts or pecans, chopped
  • 2/3 cup brown sugar
  • 4 tablespoons butter,  melted
  • 1/4 cup flour

Instructions:

  1. Mash up yams, fold in pineapple bits
  2. Mix in cinnamon, clove, nutmeg, juices, and brown sugar
  3. Mix nuts, brown sugar, butter, and flour together 
  4. Sprinkle topping over sweet potatoes
  5. Bake at 350 for 20 to 30 minutes

We liked this, especially the cinnamon flavor.
