I was looking for a low carb taco casserole recipe, and used this recipe.
Ingredients:
Filling:
- 1 Tb olive oil
- 1 pound ground beef
- taco spices (from below)
- 1 cup water (to mix in spices to beef)
- 1 bell pepper, sliced in short strips
- 1/2 onion, sliced in short strips
- 1 cup salsa
- 7 oz can green chili
- 1 can black or white beans, rinsed
- 6 low carb tortillas (cut in half)
- 3 cups shredded cheddar cheese
Taco Spice:
- 1/2 Tb cumin
- 1/2 Tb onion powder
- 1/2 Tb garlic powder
- 1/2 Tb chili powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon red pepper flakes
Instructions:
- Preheat the oven to 350F. Grease a 9 x 13-inch baking dish and set it aside.
- In a large skilet, add the olive oil. Saute the pepper and onion for a few minutes, put aside the veggies.
- Add the ground beef and cook until no longer brown. Remove excess liquid. Add the taco spices and water, and let it simmer for 5 minutes, until thicker.
- Stir in the salsa, green chilis, beans, and precooked veggies,
- Lay half the sliced tortillas into the bottom of the baking dish. Top with half the beef mixture and half the shredded cheese. Add the remaining sliced tortillas, followed by the beef, then the remaining cheese.
- Cover the baking dish with tin foil and bake for 15-20 minutes, until the cheese has melted.
- Remove the casserole from the oven and let it for five minutes, before serving.
