Ingredients:
- 2.5 pounds pork tenderloin (for me, 1/2 of a pack from Costco)
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 teaspoon cumin
- 1 teaspoon oregano
- 1/2 teaspoon. chili powder
- 1/2 teaspoon. onion powder
- 1/2 teaspoon garlic powder
- 1/2 Tablespoon chili powder
- 1 Tablespoon lime juice
- 1 Vidalia onion, sliced in thin strips
- 4 ounces canned green chilis
- 1/2 cup fresh squeezed orange juice
- 2 Tablespoons fresh chopped cilantro
Instructions:
- Place pork tenderloins in Instant Pot and sprinkle with spices. Add chilis, lime juice, and orange juice.
- Drop sliced onions on top.
- Set for slow cooker mode, and cook on low heat for 6-8 hours or high for about 4 hours.
- Shred the meat, then stir around in sauce so more is soaked up.
- If you like the crunchy bits, broil or pan fry some of the shredded pork .
- Stir in fresh cilantro. Serve with avocados, cheese, and onions in soft taco shells.
