Well, Hurricane Ian is coming, so Glenn and I made up some fudge.
Ingredients:
- 1 (14-ounce) can sweetened condensed milk
- 12 ounces (~340 grams) semisweet chocolate chips, about 2 cups
- 2 tablespoons unsalted butter
- 1/2 teaspoon pure vanilla extract
- 1 cup coarsely chopped pecans or walnuts, optional
- 1 cup mixed white chocolate and butterscotch chips, optional
Instructions:
- Line a 9-inch square pan, or a 7"x11" pan with a piece of plastic wrap about 18 to 24 inches in length, leaving the ends out to later cover the fudge.
- In a microwave safe dish, combine the sweetened condensed milk, chocolate chips, butter, and vanilla.
- Heat for 30 seconds, stir, and repeat until the chocolate has melted and the mixture is smooth.
- Stir in the nuts, if using.
- Pour the mixture into the prepared pan, and smooth out spreading to the edges.
- If using, sprinkle the mix chips over the fudge, pressing in slightly.
- Cover lightly with the ends of the plastic wrap.
- Chill in the refrigerator until the fudge is firm.
- Lift the chilled fudge out of the pan and cut into small squares.
