I wanted to make some mooncakes, and I needed some sweet red bean paste. I decided to make it, versus look for it in an Asian market.
Ingredients:
- 135 gr (about 2/3 cup) small red beans, drained
- water
- 2 tablespoons brown sugar
- 2 tablespoons white sugar
- 54 gr butter
Instructions:
- Let the benas soak overnight in water.
- In the morning, throw out the water and rinse the beans.
- Place beans in Instant Pot with 2 cups of water.
- Pressure cook in high for 30 minutes, then let natural release for 15 minutes.
- Release any remaining pressure.
- Rinse the beans in a colander.
- Put the drained beans in a food processor, and sugars and butter. Whirr until very smooth.
- Saute beans in a medium hot skillet so that they release some water and darken.
