I wanted to make an easy snack, so I made these old fashioned no-bake cookies.
Ingredients:
- 1/2 cup (113g) salted butter
- 1 3/4 cups (350g) granulated sugar
- 1/3 cup (32g) unsweetened cocoa powder
- 1/2 cup (120ml) milk
- 2/3 cup (160g) creamy peanut butter
(option - replace some peanut butter with a heaped teaspoon of Nutella) - 1 tsp vanilla extract
- 1/4 teaspoon salt
- 3 cups (275g) quick oats (don't use old fashioned oats!)
Instructions:
- Measure out all ingredients in advance.
- Line two baking sheets with parchment paper or silpat mats.
- In a 2.5 to 3 quart heavy saucepan combine butter, sugar, cocoa, and milk.
- Cook over medium heat, and stirring frequently until it reaches a full, rolling boil.
- Then - WITHOUT stirring - allow mixture to boil 60 seconds.
(If you have an instant read thermometer, you are looking to hit 230 degrees) - Remove from heat, immediately stir in peanut butter until melted in,
- Stir in vanilla and salt,
- Stir in the quick oats until well combined.
- Using a large (2 Tbsp) cookie scoop, drop lumps onto lined baking sheets.
(You might pat them down a bit with your scoop if you like a flatter cookie.) - Let rest at room temperature until set, about 20 - 30 minutes.
- Store cookies in an airtight container at room temperature.
