Ingredients:
Banana Fritters:
- 3 bananas
- 4.25 ounces (1 cup) all purpose flour
- 7 ounces water (or as needed to make a pancake-like batter)
- pinch of salt
- optional - 1 tablespoon sesame seeds
(I used them this time, but they were not needed) - 2 ounces all purpose flour for dredging
- 4 ounces coconut flakes (we used sweetened)
- 4 ounces semi-sweet chocolate (I used chocolate chips)
- 1/2 tablespoon coconut oil
Pancakes:
- 6.75 ounces (1.5 cups) cups all-purpose flour
- 3.5 teaspoons baking powder
- 1 tablespoon white sugar
- 1 cup milk
- 1 egg
- 3 tablespoons butter, melted
Instructions - Banana Fritters:
- Slice each banana into 4 wedges (first vertically, then horizontally)
- Mix 4 ounces flour and water in a medium bowl with a pinch of salt to make a thick batter
(add sesame seeds if you are using them) - Place the 2 ounces of flour on a plate or in wide bowl for dredging bananas in
- Place the coconut flakes on a plate or in wide bowl for dipping bananas in.
- Dredge bananas in flour, then dip bananas in batter, shake off excess, then dip both sides in coconut.
- Fill bottom screen of Airfryer with banana wedges, then add two layer rack and add rest of bananas on next layer
- Bake bananas at 350 degrees F for 9 minutes
Instructions - Pancake:
- Preheat a griddle on the oven to medium, grease lightly with butter.
- Mix the milk and 1.5 cups of flour into the remaining batter.
- Add the baking powder, sugar, egg, and melted butter.
- As needed, add a bit more flour or water to make the batter thick as you prefer.
- Pour about 1/3 of cup batter per pancake onto hot griddle, let cook until bubble pop.
- Flip pancakes, and cook other side for a minute or so.
- Stack pancakes on a plate while cooking all of batter. (Makes about 12 pancakes)
Assembly:
- Melt chocolate with coconut oil gently in a microwave.
(Thin with additional coconut oil or waterif needed.) - Place 3 or 4 pancakes on a plate, top with 3 of the banana wedges.
- Drizzle chocolate sauce over bananas, sprinkle with additional coconut flakes, and serve warm.
