Ingredients:
- 57 grams (2 ounces) pasta
- 50g baby spinach, sliced in thirds
- 75g smoked salmon, sliced
- 1/2 teaspoon dried basil
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic
- 1 slice fresh mozzarella (about 35 grams)
- 40 grams feta
- 1 slice fresh mozzarella (about 35 grams), broken into small chunks
- 40 grams feta, broken into small chunks
- 75g smoked salmon, sliced
Instructions:
- Cook the pasta.
- Add the spinach to a colander over a bowl.
- Drain pasta over spinach, saving a few spoonfuls of the cooking water.
- Stir pasta and spinach together to wilt spinach.
- Sprinkle spices on pasta, and stir.
- Add the salmon, basil, and cheeses to the pasta.
- As needed, add a bit of the cooking water to make a sauce.
