Ingredients:
- 2.5 tablespoons olive oil
- 1/2 tablespoon dried parsley (or 1.5 tablespoons fresh, diced)
- 1/2 tablespoon dried basil (or 2 tablespoons fresh, diced)
- 1 tablespoon diced oil-packed sun-dried tomatoes, diced
- 1 tablespoon balsamic vinegar
- about 12 ounces fresh mozzarella, sliced (I used a log from Costco)
- 3 or 4 vine ripe tomatoes
Instructions:
- For the marinade: Mix olive oil, spices,sun-dried tomatoes, and balsamic vinegar in small container. Let soak for 30 minutes or so.
- Slice tomatoes in about 1/4" slices, reserving ends caps for another use. Place tomato slices on double paper towel on a plate, and let drain for at least 10 minutes.
- Layer tomatoes and mozzarella slices in a circular pattern on a large platter.
- Evenly drizzle the marinade over the tomatoes and cheese.
- Cover with plastic wrap, and let marinade at room temperature for 2 hours before serving.
