Mini Appetizer Cheeseburger Pies

I signed up to bring an appetizer to youth group. I had made some cheeseburger appetizer bites a couple of years ago, but decided to try a different recipe.  (This makes 48 small appetizers.)




Ingredients:

Pie Crust:
  • 8 1/2 ounces All-Purpose Flour
  • 1/2 teaspoon baking powder
  • 3/4 teaspoon salt
  • 1 cup (16 tablespoons, 2 sticks) cold unsalted butter, diced
  • 1/2 cup Greek yogurt
Filling:
  • 1 lb ground beef
  • 2/3 cup onion, finely chopped
  • dash or two of salt
  • dash of cayenne pepper
  • 1 teaspoon kosher salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 2 teaspoons ground mustard
  • 2 eggs
  • 1/2 c ketchup
  • 1/2 c milk

Instructions:

  1. Whisk together the flour, salt, and baking powder. 
  2. Work the diced butter into the flour mix to make a coarse/crumbly mixture.
    (Leave most of the butter in large, pea-sized pieces.)
  3. Add the Greek yogurt, and stir until the mixture starts to come together in large clumps. 
  4. Turn dough out onto a floured work surface, and use a few kneads to bring it together.
  5. Pat the dough into a log, then roll it into an 8" x 10" rectangle. 
  6. Dust the dough with flour, and starting with a shorter end, fold it in three times like a business letter.
  7. Flip the dough over, rotate it 90 degrees, dust with flour again, then roll it again into an 8" x 10" rectangle. Fold it in thirds again.
  8. Wrap the dough in plastic wrap, and chill for at least 30 minutes before using.
  9. Grease a mini muffin pan with cooking spray. Pre-heat oven to 375 degrees.
  10. Saute the onion and ground beef until beef is fully cooked.
  11. Drain and add all the filling spices. Set aside to cool while you fill the mini muffin pans holes.
  12. Divide the pie dough in half, and divide each half into 24 pieces.
  13. Press each dough piece into a well in the mini muffin pan.
  14. Whip together the egg, then stir in the milk and ketchup. 
  15. Mix the egg/milk mixture into the hamburger.
  16. Spoon the hamburger mixture into the wells
    (I used a small cookie scoop to help with the portions.) 
  17. Top each well with a little grated cheese and a small slice of bacon.
  18. Cook for about 20 minutes until a toothpick inserted comes out clean.

Carole's Notes:

These were a hit with the youth - they did ask for mustard and ketchup. I first made these with a biscuit crust, but I think a pie crust would hold together better. Either use my recipe or another one, or use store bough double pie crust and divide it up.
