Ingredients:
Pie Crust:
- 8 1/2 ounces All-Purpose Flour
- 1/2 teaspoon baking powder
- 3/4 teaspoon salt
- 1 cup (16 tablespoons, 2 sticks) cold unsalted butter, diced
- 1/2 cup Greek yogurt
Filling:
- 1 lb ground beef
- 2/3 cup onion, finely chopped
- dash or two of salt
- dash of cayenne pepper
- 1 teaspoon kosher salt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 2 teaspoons ground mustard
- 2 eggs
- 1/2 c ketchup
- 1/2 c milk
Instructions:
- Whisk together the flour, salt, and baking powder.
- Work the diced butter into the flour mix to make a coarse/crumbly mixture.
(Leave most of the butter in large, pea-sized pieces.) - Add the Greek yogurt, and stir until the mixture starts to come together in large clumps.
- Turn dough out onto a floured work surface, and use a few kneads to bring it together.
- Pat the dough into a log, then roll it into an 8" x 10" rectangle.
- Dust the dough with flour, and starting with a shorter end, fold it in three times like a business letter.
- Flip the dough over, rotate it 90 degrees, dust with flour again, then roll it again into an 8" x 10" rectangle. Fold it in thirds again.
- Wrap the dough in plastic wrap, and chill for at least 30 minutes before using.
- Grease a mini muffin pan with cooking spray. Pre-heat oven to 375 degrees.
- Saute the onion and ground beef until beef is fully cooked.
- Drain and add all the filling spices. Set aside to cool while you fill the mini muffin pans holes.
- Divide the pie dough in half, and divide each half into 24 pieces.
- Press each dough piece into a well in the mini muffin pan.
- Whip together the egg, then stir in the milk and ketchup.
- Mix the egg/milk mixture into the hamburger.
- Spoon the hamburger mixture into the wells
(I used a small cookie scoop to help with the portions.) - Top each well with a little grated cheese and a small slice of bacon.
- Cook for about 20 minutes until a toothpick inserted comes out clean.
Carole's Notes:
These were a hit with the youth - they did ask for mustard and ketchup. I first made these with a biscuit crust, but I think a pie crust would hold together better.
