I wanted to make an easy snack that Doug would like - I decided to look for a Snickerdoodle Bar recipe.
Ingredients:
Dough:
- 332 grams (2 2/3 cups) all purpose flour (I used 100 gr whole wheat, rest all purpose)
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- 1/8 teaspoon ground nutmeg
- 1 teaspoon salt
- 214 gr (2 cups packed) brown sugar
- 2 sticks (1 cup) butter, room temperature
- 2 eggs, at room temperature
- 1 tablespoon vanilla extract
Topping:
- 2 tablespoons white sugar
- 2 teaspoons cinnamon
- pinch of nutmeg
Instructions:
- Preheat oven to 350° F. Lightly grease and/or line a 9×13 inch pan with parchment paper.
- Mix together the flour, baking powder, cinnamon, nutmeg and salt in a medium bowl and set aside.
- In a large bowl, beat together butter and brown sugar for 3-5 minutes.
- Beat in the eggs one at a time, then the vanilla, and beat until smooth.
- Stir in the flour mixture until it is a well blended thick dough.
- Spread dough in prepared pan using a greased spatula or your wet hands.
- Mix the white sugar, cinnamon, and nutmeg in a little bowl.
- Sprinkle cinnamon sugar mixture over the top of the batter.
- Bake 25-30 minutes or until the surface springs back when gently pressed. Cool before cutting.
