I wanted to make a small dessert, so I made two "chocolate chip cookies in a mug". I repeated similar recipe a couple of days later, and found Doug likes the "gooey" version, and I prefer the "cakey" version.
Ingredients:
Gooey Version:
- 1 Tablespoon unsalted butter
- 1 Tablespoon granulated sugar
- 1 Tablespoon brown sugar, firmly packed
- 1/4 teaspoon vanilla extract
- light 1/8 teaspoon or pinch of salt
- 1/2 an egg (if you are making two, or else use egg yolk)
- 3 Tablespoons all-purpose flour
- 2 Tablespoons chocolate chips
Cakey Version:
- 1 Tablespoon unsalted butter
- 1 Tablespoon granulated sugar
- 1 Tablespoon brown sugar, firmly packed
- 1/4 teaspoon vanilla extract
- light 1/8 teaspoon oe pinch of salt
- 1/2 an egg (if you are making two, or else use egg yolk)
- 3 Tablespoons all-purpose flour
- 2 Tablespoons chocolate chips
Instructions:
- Microwave butter in 2 mugs until melted, 30 seconds to 1 minute.
- Use a spoon to mix in sugars, vanilla extract and salt into each mug until well-combined.
- Mix up egg, and divide between the two mugs, mixing in completely.
- Mix in flour.
- Fold in chocolate chips, reserving a few for the top.
- With two mugs, nicrowave on high for 50 to 60 seconds.
(Use less time and only the egg yolk for one mug.)
